Winter Squash Bisque
6 med. acorn squash
2 14-1/2 oz. cans chicken broth
3/4 tsp. ginger
3/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. ground cinnamon
1-1/2 C half-n-half or light cream
Halve squash and remove seeds, put cut sides down on baking sheet and bake at 350 degrees for 50 mintes or until squash is tender. Scoop out meat, and put in batches through a blender or processor to make puree. Add some of the stock if too thick.
Stir together pureed squash and remaining broth in large pan. Stir in all ingredients but cream; bring to a boil. Reduce heat and stir in cream. Heat through, but do NOT boil.
Nutty Green Beans
1/2 tsp. salt
1 1/2 lbs. fresh green beans, washed and ends trimmed
6 tbsp. unsalted butter (bet I can halve that...)
3/4 C coarsely chopped pecans (almonds as substitution?)
1 1/2 tsp Worcestershire sauce
1/4 tsp. freshly ground black pepper
Blanch and chill beans - 5 min. tops. Drain. Put butter in pan and add pecans, Wor. sauce, 1/2 tsp. salt and black pepper and cook, stirring frequently to coat the nuts, until nuts are fragrant (3-4 min.) Add green beans and cook, stirring, until well coated and warmed through, about one minute. Remove from heat and serve.
Winter Greens with Cranberry Vinaigrette
Make balsamic vinaigrette with cranberry juice, oil, and vinegar, 1 tsp. sugar, 1/2 tsp. salt.
1 head romaine
1 head Belgian endive
1 cuke, thinly biased sliced
1 C. fresh enoki mushrooms
1 red sweet pepper, cut into thin strips
1/2 C. alfalfa sprouts (opt.) <-- um, no. Bean sprouts? Maybe
1 avocado - thin slices
Layer for pretty, toss at table. Heh. Toss the salad. I'm 12.
Brownie Walnut Caramel Pie
Are you KIDDING ME??
1 9 inch unbaked pie shell
1/2 C chopped walnuts
20 caramels, unwrapped (har)
1 14 oz. can sweetened condensed milk
1 egg, beaten (raped, optional - Get in there and make me a pie, bitch)
2 TBSP butter, melted (browned? Nah, too much effort - there's caramel already)
6 oz. package of semi-sweet choc. chips, melted
Preheat oven to 350. Sprinkle nuts onto pie shell. In small saucepan, melt caramels with 2/3 C condensed milk. (note: can microwave for 4 minutes: stir every minute) Spoon over walnuts. In bowl, combine egg, butter, and str in melted chips. Pour over caramel layer. Bake for 35 minutes, or until center is set.
HOLY DIABETES. Yum.
1 lb. fresh lump crabmeat
1/4 C red bell pepper, minced
1/2 C scallion, minced
1/4 C mayo
1 TBSP Dijon mustard (Pardon me, but do you happen to have Grey Poupon?)
2 TBSP unseasoned bread crumbs or Panko
1 C flour for dredging
1 tsp curry powder
2TBSP peanut or vegetable oil
Mix together crab meat, egg, peppers, scallion, mayo, mustard, S&P. Add enough bread crumbs to bind the mix into cakes. Start with 2 TBSP and add more if needed.
Refrigerate until ready to cook. Season the flour with S&P and curry powder. Preheat a large skillet. Add oil and butter and heat until butter foam subsides. Shape the cakes (4)dredge each in flour, and cook (adjusting heat if needed) and turn once (gently) until golden brown. About 10 minutes. Serve with wedge.
SORREL PUNCH - zomg, Christmas dinner gets this
2 C dried hibiscus flowers (flor de Jamaica or sorrel at the Carib. shop)
1/4 coarsely grated or slivered ginger
1 (3 inch) stick cinnamon
10 whole cloves
6 whole allspice
8 C boiling water
1 to 1 1/4 C sugar
RUM (but why is all the rum gone?)
Boil water, add to first 5 ingredients in non-reactive pan. Add sugar and stir to dissolve. Steep at room temp. for 2 - 3 hours, then refrigerate.
After several hours (or overnight) strain spices from mix. Keep refrigerated until serving time. Add a shot of rum to individual servings. (Or go all old school Prom and dump it into the punch bowl.)
BLEU Cheesecakes - appetizer
2 TBSP unsalted butter, softened at room temp
3 TBSP dried bread crumbs or Panko
6 oz. bleu cheese
6 oz. cream cheese, softened to room temp
1/4 tsp chopped fresh rosemary
Combine butter and crumbs in large bowl and mix well. Press in the bottoms of 6 small ramekins. Combine the bleu cheese, cream cheese, egg and rosemary in bowl and beat for 1 -2 min. or until blended. Spoon into prepared baking cups. Bake at 350 degrees for 15 - 18 minutes, or until set. Garnish with rosemary sprigs. (ooh, pretty!)
Butternut Squash and Apple Casserole
Preheat over to 350. Peel, seed, and cut 1 small butternut (about 2 pounds) into small slices. Peel, core, seed, and slice 2 apples. (GRAVENSTEINS, woe) Place squash and apple slices in an 11 x 7 baking dish. In a small bowl, combine 1/2 C. firmly packed brown sugar, 1 TBSP flour, 1 tsp. salt, 1/4 tsp. cinnamon, 1/4 tsp. nutmeg. Cut in 4 TBSP cold unsalted butter with form or pastry cutter until crumbly.
Sprinkle crumbs evenly over slices. Bake 45-50 minutes. (Holy sheet. This looks YUM.)
Pumpkin Chocolate Chip Muffins
1/2 C chopped pecans
1 2/3 C all-purpose flour
1 tsp. baking soda
1/2 tsp baking powder
1/2 tsp salt
1 C sugar
1 tsp. cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
2 large eggs
1 C canned pumpkin (plain)
1/2 C melted butter
1 C semi sweet chocolate chips
Toast pecans (opt.). Combine flour, baking soda, baking powder, salt, sugar, cinnamon, cloves, and nutmeg in a large bowl. Whisk together eggs, pumpkin and melted butter in separate bowl, then add the nuts and chocolate chips and stir well. Fold pumpkin mixture into flour mix until just incorporated. Spoon into greased muffin pans and bake at 350 for 20 -25 minutes.
1 doz reg. muffins, or 4 doz mini-muffins.
Fig and Tomato Bruschetta - appetizer!! NUM.
8 toms, cored and diced
4 dried Black Mission figs, diced or chopped
1 or 2 basil leaves, chopped
2 tsp. olive oil
1 1/2 TBSP balsamic vinegar
Stir together tomatoes, figs, basil, olive oil, and vinegar. Let sit for 3-4 hours. For best results, refrigerate overnight. When ready to serve, slice ciabatta bread into 1/4 inch thick slices. Brush with olive oil and toast on a flat top burner or under a broiler. While warm, spread with goat cheese and a generous dollop of tomato/fig mixture. Serve immediately.

Cranberry-Apple Baked Brie
2 TBSP maple syrup
1 tbsp unsalted butter, melted
1 small Gala apple, cored, seeded, and cut into 1/2 inch pieces
1/3 C sliced almonds
1/3 C dried cranberries
1 round (1 pound) whole brie
Heat oven to 350. Coat a small jellyroll pan with non-stick spray, or line with foil. In a small cup, mix syrup and butter until well blended. Reserve 1/3 C chopped apple. Set aside about 2 TBSP of best looking sliced almonds for final presentation. (gah - just get on with it, Mah-Thah) In medium-sized bowl, toss remaining chopped apple and almonds, add 1/4 c cranberries and 1 1/2 tbsp maple syrup/butter mix.
With sharp knife, split Brie in half on the horizon. Place one half, cut size up, on sheet. Spoon cranberry/apple mix on top. Top with other half of Brie, brush some of the remaining maple/butter mix over the top. Arrange "pretty" apple pieces and almonds on top, and sprinkle remaining cranberries over the whole thing (or for crying out loud. DUMP THE SHIT ON IT)
Drizzle or brush remaining syrup mix over the decorative fruit/nuts--- (NOTE: I say toss the remaining cranberries, almonds and apples in this leftover syrup FIRST, then put on top. I don't need to make an initial with the stuff, just eat it) and bake in 350 oven for 7 minutes, or just when the Brie begins to melt. Serve immediately with cracker. (Oooh, or fresh apple and pear slices, YUM.)
Dark Cherry Chunk and Dried Cherry Oatmeal Drop Cookies
1/2 C margarine
1/2 C butter (wah? Lame)
1 C brown sugar, firmly packed
1 1/2 tsp vanilla
1 1/2 C flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
3 C oats
1 C dried cherries
8 oz. semi-sweet chocolate baking chunks (50% cocoa, min.)
Preheat to 350. Cream margarine, butter, and sugar until smooth. Add eggs and vanilla; mix. Add flour, soda, cinnamon and salt. Mix until JUUUUST incorporated - don't over mix.
Add oats, cherries and chocolate chunks and mix until evenly distributed. Drop by 1/4 cupfuls (glllaaaaaaah YUM) onto lightly greased cookie sheets and bake approx. 10 -12 minutes.
These can also be made into bars by baking the dough in a 9/13 inch pan for 30 minutes. Makes 3 doz large cookies.
ROYAL CUP New Year's Hello!
1/2 oz. Grand Marnier
3 drops Peychaud bitters
4 oz. chilled Champagne
Add 1, 2, 3, with the champagne added slooooowly so it doesn't foam over. Serve immediately.
